No Fat Hollandaise Sauce
This is something that I just whipped up this morning to go atop the poached eggs on my Dukan Lemon Ricotta Galette. Remarkably good fake.
1 egg yolk
2-3 tbsp no-fat sour cream
1 tsp lemon juice
pinch of salt
small grind fresh white pepper (optional)
Place all ingredients in a small heavy saucepan. Heat over very low heat stirring constantly. In a few minutes, it will start to thicken. Don’t stop stirring. Don’t let the mixture bubble.
This recipe makes enough sauce for four poached eggs, served atop the galette of your choice.
If you really want the real thing, Youtube is your friend. I prefer the immersion blender technique.
